Tofu and Eggs (Recipe)















Ingredients

1/2 kilo tofu, cut in big cubes
6 eggs, hard boiled, cut to desired sizes
1 1/2 cups thick coconut milk
Vegetable oil
Salt to taste

Marinade

1/4 cup water
3 tablespoon cream of mushroom powder
1 small chili, chopped
1 tablespoon calamansi extract
1/2 clove garlic, crushed, chopped


Steps

1. Marinate tofu for about 30 minutes. (To make a marinade: Mix water, soy sauce, cream of mushroom powder, chili, calamansi extract, and garlic.)
2. Drain tofu and slightly fry in hot oil. Set aside.
3. In a saucepan, mix coconut milk and marinade stirring constantly.
4. Season with salt.
5. Bring to a boil over low fire until mixture thickens.
6. Pour over tofu and eggs. Mix.
7. Serve hot.
