Chicken Skewers with Spicy Island Marinade (Recipe)


Ingredients

Spicy Island Marinade:

30g (1oz) chopped spring onions
60ml (2fl oz) fresh lime juice
1/2 tbsp chopped fresh parsley
1/4 tsp dried thyme
1/4 tsp dried crushed rosemary
1/2 tsp chopped garlic
1 fresh jalapeƱo, seeded and chopped
1/8 tsp (or to taste) hot sauce
Salt and freshly ground black pepper to taste

Chicken Skewers:

2 pieces boneless, skinless chicken breast (about 454g/1 lb total)
8 white mushrooms, stems trimmed and brushed clean
4 metal or bamboo skewers

Steps

1.  For the marinade, combine all the ingredients in a food processor and mix until finely chopped.  Set aside until ready to use.
2.  Slice each chicken breast into four equal pieces for a total of eight pieces.  Place the chicken in a plastic storage bag with a leak-proof seal.  Pour the marinade over the chicken and refrigerate for at least 3 hours.
3.  Remove the chicken from the marinade and discard the marinade.  Thread a rolled-up strip of chicken on a skewer.  Add a mushrooms and another strip of chicken.  Repeat with the remaining skewers.
4.  Prepare a charcoal grill or preheat a gas grill to high heat.  Lightly oil the grill rack.  Grill the skewers on each side for about 5 minutes or until done.  Turn the skewers several times to ensure all sides cook evenly.   Transfer the skewers to a warm platter.
