Ingredients
60ml (2fl oz) extra-virgin olive oil
3 cloves garlic, finely chopped
4 medium courgettes, scrubbed and cut in half longways
Salt and freshly ground black pepper
2 tbsp balsamic vinegar
15g (1/2 oz) coarsely chopped fresh herbs (mint, basil, chives, parsley etc.)
Steps
1. Heat the oil in a small saucepan over low heat. Add the garlic and cook until just fragrant. Remove from the heat.
2. Prepare a charcoal grill or preheat a grill to high. Make sure the grill grate is clean and lightly oiled to prevent sticking.
3. Brush the courgettes with the garlic oil and season with salt and pepper. Grill the courgettes, skin side down, until they begin to soften about 3 minutes. Turn and cook the other side until tender; set aside.
4. Cut each piece of courgettes in half at an angle into two or three pieces and place in a bowl. Drizzle the vinegar over the courgettes and add the chopped herbs and the remaining garlic oil. Toss well and season with salt and pepper. Serve warm or at room temperature.
