Broccoli Bacon Salad (Recipe)


Ingredients

2 bunches broccoli, chopped, parboiled and drained
8 bacon strips, cooked and crumbled
185g (6oz) grated Cheddar cheese
1 medium-size red onion, chopped
60ml (2fl oz) red wine vinegar
2 tbsp honey
180ml (6fl oz) mayonnaise 
1 tbsp fresh lemon juice
1/2 tsp salt
1/4 tsp freshly ground black pepper

Steps

1.  In a large bowl, combine the cooled broccoli, bacon, cheese and onion.  Prepare the dressing by whisking together all the remaining ingredients.  Pour the dressing over the broccoli mixture and toss to combine.  Cover and refrigerate until ready to use.
