Champagne Summer Berries (Recipe)


Ingredients

185g (6 oz) strawberries, bulled and cut in half
185g (6 oz) raspberries
90g (3 oz) redcurrants
90g (3 oz) blueberries
Sugar substitute to taste
60ml (2fl oz) fresh lemon juice
250g (8fl oz) chilled champagne
Mint sprigs for garnish

Steps

1.  Mix all the berries in a glass bowl and sprinkle them with a pinch of sugar substitute and half the lemon juice; set aside for 10 minutes.
2.  To serve, spoon the fruit into glass dishes.  At the table, pour the chilled champagne over the fruit and decorate with mint sprigs.
