Peach Coffee Cake (Recipe)


Ingredients

Cake:
1/2 cup butter or margarine
1/3 cup sugar
1 teaspoon vanilla
1 egg, beaten
1 1/2 cups all-purpose flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk

Toppings:
1 8-ounce can sliced peaches drained
1/4 cup packed brown sugar
2 tablespoons melted butter or margarine

Steps

1. Preheat oven to 350°.  Grease an 8x82-inch baking pan.
2.To make the cake: In a large bowl, cream the 1/2 cup butter or margarine, sugar and vanilla together with an electric mixer.  Add the egg and beat well.
3. In a small bowl, stir together the dry ingredients.  Add the dry ingredients to the butter-sugar mixture alternately with the milk.



4. Spread the batter into the prepared pan.  Top with the sliced peaches.  Sprinkle with the brown sugar and drizzle with the melted butter.
5. Bake in the 350° oven for 30 to 35 minutes or until done. 

Tips:

If the batter starts to climb your beaters as you're putting together this recipe, add the rest of the flour mixture by hand.

Don't worry about leftovers.  They're easy to heat in the microwave oven.  Just micro-cook, one piece at a time, 100% power (high) for 15 seconds.
