Ingredients
1/2 cup grated Parmesan cheese
1/4 cup butter or margarine, softened
3 tablespoon mayonnaise or salad dressing
3 tablespoons chopped scallion or green onions
Dash bottled hot pepper sauce
1 1/2 pounds skinless sole fillets or any fresh white fish such as orange roughly or red snapper
2 tablespoons lemon juice
Sliced scallions (optional)
Steps
1. Grease the rack of broiler pan; set aside.
2. In a small bowl, stir together the Parmesan cheese, butter or margarine, mayonnaise or salad dressing, scallions or green onions and hot pepper sauce. Set aside.
3. Measure the thickness of the fish fillets, then place them in a single layer on the prepared rack of the broiler pan. Brush the fillets with the lemon juice and let stand for 10 minutes.
4. Allow 4 to 6 minutes of broiling time per 1/2-inch thickness of fillet. Broil the fillets 3 to 4 inches from the heat for 4 to 5 minutes. Spread the cheese mixture over the fillets. Broil for 2 to 3 minutes more or until the fish flakes easily when tested with a fork and the topping is golden. Garnish each fillet with additional sliced scallions, if desired.
Tips:
Scallions are also called green onions. You can use as much of the green part as you want - just remove any wilted, brown or damaged tops. One green onion yields about 2 tablespoons sliced.
This buttery cheese topping is also good when spread on sliced French bread, and then broiled.
Use a ruler to check the distance from the heat source to the top of the fish - not to the top of the pan. Being too close or too far away from the heat will affect the length of broiling time.
