Arroz (Recipe)


Ingredients

1 tablespoon cooking oil
1 cup plus 2 tablespoons rice
1/2 cup sliced onion
1 14 1/2-ounce can tomatoes, chopped and drained
1 4-ounce can chopped green chilies, drained
2 1/4 cups water
3/4 teaspoon salt
1/2 cup thinly sliced potatoes
1/2 cup thinly sliced carrots
1/2 cup frozen peas

Steps


1. In a 10-inch skillet, heat the oil over medium heat.  Add the rice and onion to the skillet and cook and stir over medium heat for 2 to 3 minutes or until the rice is golden.  (Use medium heat to assure that the rice won't stick to the skillet.)
2. Add the tomatoes and the chilies to the skillet and cook the mixture for 3 minutes.  Stir in the water and salt.


3. Layer the potatoes, carrots and peas on top of the mixture in the skillet.  Cover the skillet and simmer for 20 to 25 minutes or until the rice and vegetables are tender.

Tips:

Arroz is such a colorful dish that you can make it in your prettiest skillet and bring it right to the table - no serving dish needed!
