Chicken With Rosemary And Garlic (Recipe)


Ingredients

1/4 cup olive oil
1 2 1/2- to 3-pound broiler fryer chicken or roasting hen
Several sprigs fresh rosemary
1 tablespoon butter or margarine
1/2 teaspoon salt
1/8 teaspoon pepper
2 pounds small new red potatoes
30 to 40 clove garlic, unpeeled
1/4 teaspoon pepper

Steps

1. Preheat the oven to 375°.
2. Pour 2 tablespoons of the olive oil in a 15 1/2x10 1/2x2-inch roasting pan: set aside.
3. Rinse the chicken inside and out; pat dry.  Stuff a few sprigs of rosemary inside the cavity along with the butter or margarine.  Sprinkle with 1/4 teaspoon of the salt and the 1/8 teaspoon pepper.  Place the chicken in the prepared roasting pan, breast side up.


4. Scrub the potatoes, leaving them whole.  Place the potatoes and the unpeeled garlic around the chicken.  Sprinkle the potatoes with the remaining salt and the 1/4 teaspoon pepper.  Tuck rosemary sprigs all around the chicken among the potatoes and garlic.  Drizzle the remaining olive oil over all.


5. Roast the chicken, uncovered, in the 375° oven for 10 minutes.  Reduce heat to 350° and roast for 50 to 70 minutes more or until the chicken is no longer pink, turning the chicken and potatoes regularly so they crisp evenly.  Transfer the chicken to a serving platter.  With a slotted spoon, transfer the potatoes and garlic to the platter.  Discard the baked rosemary and garnish with fresh rosemary, if desired.

Tips:


Squeeze each roasted garlic clove with your fingers to free the garlic from its jacket.
