Ducy's Baked Chicken And Yams (Recipe)


Ingredients

1 2 1/2-pound broiler-fryer chicken, quartered
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs, beaten
3 tablespoons water
3/4 cup fine, plain bread crumbs
2 pounds yams or sweet potatoes, peeled and sliced 1/2 inch thick
1/3 cup butter or margarine, melted

Steps

1. Preheat oven to 350°.  Lightly grease a 13x9x2-inch baking pan.
2. Sprinkle the chicken quarters with the salt and pepper.  In a pie plate, stir together the eggs and water.  In a second pie plate, spread the bread crumbs.


3. One at a time, dip the chicken quarters first in the egg mixture, then roll them in the bread crumbs, patting to cover the chicken well.  Keep the wet and dry mixtures separate by using one hand for the egg mixture and the other for the bread crumbs.
4. Arrange the yam slices in the prepared pan.  Drizzle with half of the melted butter or margarine.  Arrange the chicken on top of the yams.  Drizzle the remaining melted butter or margarine over the chicken.
5. Bake the chicken, uncovered, about 1 hour or until the yams are tender and the chicken is cooked through.  Serve on a warm platter.

Tips:


To quarter a chicken: Use a long, heavy knife or kitchen shears to cut through the center of the backbone to halve the chicken.  Then cut the chicken halves crosswise through the breast and backbone, as shown, to make chicken quarters.

If you wish, you can substitute chicken pieces for the chicken quarters in this recipe.

For a change of taste, try substituting seasoned bread crumbs.
