Creamed Onions (Recipe)


Ingredients

18 small white onions
3 tablespoons butter or margarine
3 tablespoons all-purpose flour
1 1/2 cups milk
1/4 teaspoon salt
1/4 teaspoon Worcestershire sauce
2 tablespoons snipped parsley
1/4 teaspoon paprika

Steps


1.  In a medium saucepan, cook the onions in their skins in boiling water, about 20 minutes or until tender; drain.  Cool slightly.  Pool the onions by popping them out of their skins.

2.  In a saucepan melt the butter or margarine.  Add the flour to the butter and stir with a wire whisk until blended.

3.  Meanwhile, in another saucepan, bring the milk to boiling and add the salt and Worcestershire sauce.  Add the milk mixture all at once to the butter flour mixture, stirring vigorously with the whisk until the sauce is smooth and thickened.

Tips:

The flavorful cream sauce in this recipe is delicious served over cooked peas or broccoli.  Use 2 cups of any type of cooked vegetables and you'll have a perfect amount of sauce.

Save on pan washing by cooking the onions first, then use the same pan to make the cream sauce.

To simplify the making of the sauce, you can add the cold milk, salt and Worcestershire sauce directly to the flour-butter mixture.  Then, cook and stir the mixture over medium heat until the sauce is thickened and bubbly.
