Broiled Marinated Steak-Bistecca (Recipe)


Ingredients

180ml (6fl oz) olive oil
60ml (2fl oz) red wine vinegar
1 tbsp finely chopped fresh flatleaf parsley
1/4 tsp dried oregano
1.3kg (3lb) 25mm (1 in) thick T-bone, porterhouse or sirloin steak
Salt and freshly ground black pepper to taste

Steps

1.  In a shallow baking dish large enough to hold the steak comfortably, combine the olive oil, vinegar, parsley, garlic and oregano.  Lay the steak in the marinade and turn it to coat both sides completely.  Leave the steak to marinate for at least 6 hours in the refrigerator, turning it every so often.

2.  Preheat the grill.

3.  Remove the steak from the baking dish (discard the marinade).  Grill it 75mm (3 in) from the heat for about 4 minutes on each side or until it is done to your taste.  Remove from the grill and sprinkle with salt and pepper.  Let the steak stand for 5 minutes before carving.  Slice into 12mm (1/2 in) strips, cutting slightly on the bias.  Transfer the steak to a warmed platter and serve immediately.
