Ingredients
1 medium onion chopped
3 cloves garlic, finely chopped
3 tbsp extra-virgin olive oil
830g (1 lb 12oz) tin crushed tomatoes in puree
430g (15oz) tin tomato sauce with no added sugar
1/2 tsp bicarbonate of soda
15g (1/2 oz) fresh chopped herbs, including basil, thyme and parsley
Salt and freshly ground black pepper to taste
Steps
1. In a medium-size frying pan saute the onion and garlic in the olive oil over medium heat until tender. Add the crushed tomatoes and tomato sauce, stirring to mix. Continue to stir to prevent scorching.
2. Add the bicarbonate of soda and fresh herbs, continuing to stir. Lower the heat to a simmer, and add salt and pepper to taste. Simmer for 15 minutes, stirring frequently.
