Grilled Beef Sirloin with Shiitake Sauce (Recipe)


Ingredients

900g (2lb) beef sirloin, trimmed of all fat
Salt and freshly ground black pepper to taste
Olive oil
30g (1oz) unsalted butter
1/2 tbsp very finely chopped root ginger
150g (5oz) fresh shiitake mushrooms
250ml (8fl oz) thick whipping cream
1215ml (4fl oz) rice wine
2 tbsp tamari
1 tbsp honey
3/4 tsp grated orange zest
1/2-1 tsp Chinese chilli paste
Fresh parsley for garnish

Steps

1.  Prepare a charcoal grill or preheat a grill to 180°C, 350°F.
2.  Season the beef with salt and pepper.  Brush the grill with olive oil and grill the beef for about 30-40 minutes, turning about every 10 minutes, until the internal temperature of the meat reads 85°C, 135°F for medium-rare.  Let the meat stand in a warm place for at least 10 minutes to allow the juices to reabsorb.
3.  Place a large saute pan over high heat.  Add the butter and the ginger and cook, stirring frequently, for about 2 minutes.  Add the mushrooms and cook until softened, about 3-4 minutes, stirring frequently.  Add the whipping cream, rice wine, tamari, honey, orange zest and chilli paste; bring to the boil, stirring often, and reduce to a simmer until the sauce thickens.
4.  Cut the meat into four even steak portions and place on heated plates.  Spoon the sauce around the beef, and garnish with chopped parsley.
