Ingredients
3 ripe plums, stones removed, peeled and cut into pieces
250ml (8fl oz) water
1/4 tsp minced fresh ginger
3 tbsp rice vinegar
3/4 tsp Chinese five-spice powder
1/2 tsp chopped jalapeño pepper
2 tbsp olive oil
454g (1lb) prawns, peeled and deveined
Salt and freshly ground black pepper
Steps
1. Place the plums in a blender. Add the water and process at high speed until pureed. Pour the puree into a medium-size saucepan and add the ginger, rice vinegar, five-spice powder and jalapeño. Simmer over low heat uncovered for 20 minutes to reduce and thicken the sauce. Stir frequently to prevent catching. Adjust seasoning to taste.
2. Add the oil to medium-size saute pan over medium-high heat. Season the prawns with salt and pepper. Cook the prawns for about 2 minutes on each side, until done. Serve on a warmed platter with the warm dipping sauce.
