This old-world-style dish is delicious with or without the caraway seeds. It;s good served with red cabbage or a spinach salad and chewy rye bread.
Ingredients
2 medium onions, halved and sliced
1 1/2 pounds boneless beef chuck or beef round steak, trimmed of fat and cut into 1-inch cubes
4 teaspoons imported sweet paprika
1/4 teaspoon freshly ground pepper
3 tablespoons ketchup
2 tablespoons water
3/4 pound small red potatoes, scrubbed and shredded
1 (14 1/2 ounce) can sauerkraut, rinsed and well drained
1/2 cup sour cream
1/2 to 1 teaspoon caraway seeds (optional)
Chopped fresh parsley, for garnish
Steps
1. In a 3 1/2 quart electric slow cooker, mix together the onions, beef, paprika, pepper, ketchup, water, and potatoes. Top with the sauerkraut.
2. Cover and cook on the low heat setting 8 hours, or until the beef is tender. Mix gently. Stir in the sour cream and caraway seeds. Serve garnish with chopped fresh parsley.
