Ingredients
225g (8oz) unpeeled cucumber slices
8 mint leaves
1 tbsp chopped parsley leaves
2 cloves garlic, chopped
90 (3oz) firm tofu
4 tbsp fresh lemon juice
1 tsp honey
Salt and freshly ground black pepper to paste
1 head round lettuce, washed, patted dry and cut into strips
2 ripe avocados, stoned, peeled and sliced
1 cucumber, peeled and sliced
Steps
1. For the dressing, combine all the ingredients in a blender or food processor and blend to a smooth. creamy consistency. Adjust with a little water if it is too thick.
2. Place the lettuce strips on a serving platter or individual plates. Arrange the avocado and cucumber on top. Drizzle the dressing over the salad and serve.
