Ingredients
6 slices prosciutto
2 ripe pears
Extra-virgin olive oil
Salt and freshly ground black pepper to taste
680g (1 lb 8 oz) mixed salad greens
Salad dressing of your choicee
Fresh grated Parmesan cheesee
Steps
1. Cut each slice of prosciutto in half longways. Cut each pear into six wedges and remove the core.
2. Toss the pear wedges in about 2 tablespoons of olive oil until very hot, almost smoking. Mark each side of the pear slices with dark brown grill marks on each side, using tongs to turn. This should take only a few minutes on each side. (If it takes longer, the pan needs to be hotter.)
3. Preheat the grill to low. Wrap a piece of prosciutto around the middle of each pear. Place all the wrapped pears on a lightly oiled baking sheet and cook for about 2-3 minutes on each side.
4. Serve hot on a bed of salad greens with your choice of salad dressing (vinaigrettes are best). Top the salad with Parmesan cheese, season with salt and pepper, drizzle with a little extra-virgin olive and serve immediately.
