Ingredients
250ml (8fl oz) mayonnaise
30g (1 oz) chopped fresh flat-leaf parsley
15g (1/2 oz) chopped fresh chives
1 tbsp chopped spring onion greens
1 1/2 tsp anchory paste
1 tsp white wine vinegar
1/4 tsp chopped garlic
900g (2 lb) medium beefsteak tomatoes
Steps
1. Add all the ingredients except the tomatoes to the work bowl of a food processor (or a blende); puree until pale green and smooth. Transfer to a bowl and thin with a little water if desired.
2. Cut the tomatoes into wedges or 6mm (1/4 in) slices. Place the tomatoes on a platter or individual serving plates, and sprinkle with salt and fresh ground black pepper. Drizzle the dressing over the tomatoes. Serve immediately.
