Ham and Cheese Salad (Recipe)


Ingredients

One 6mm (1/4inn)-thick slice ham
30 (1oz) Jarlberg or Swiss cheese
60g (2oz) sliced mushrooms
1 1/2 tbsp chopped celery
1 tbsp chopped parsley
1 tbsp olive oil
1 tbsp white wine vinegar
1 tbsp Dijon mustard
1 tbsp double cream
1 tbsp freshly grated Parmesan cheese
Salt and freshly ground black pepper to taste

Steps

1.  Slice the ham into strips about 50mm (2in) long.  Slice the cheese in the same manner.  Put the ham and cheese into a large mixing bowl along with the mushrooms, celery and parley.
2.  Combine the remaining ingredients in a small mixing bowl; whisk together to blend.  (You can add sugar substitute to make this more of a 'honey' mustard dressing.)  Adjust the salt and pepper to taste.  Toss three-quarters of the dressing with the ham and cheese mixture to coat evenly.  Add more dressing if desired.
