Brassica with Chilli Sauce (Recipe)

Ingredients

3 bunches brassica, trimmed, rinsed and patted
3 tbsp extra-virgin olive oil
4 cloves garlic, sliced paper thin
60ml (2fl oz) Chinese sweet chilli sauce
Salt and freshly ground black pepper to taste

Steps

1.  Cut the brassica into large florets.
2.  Bring a large pot of salted water to the boil.  Cook the brassica for about 3 minutes or just until tender and a vibrant green.  Drain through a colander and rinse under cool water.  Set aside to drain.
3.  Heat the olive oil in a large saute pan over medium heat.  Add the garlic and cook until soft, about 2 minutes.  Add the brassica and cook stirring often, until heated through.  Toss in the sweet chilli sauce and season with salt and pepper.  Serve immediately.
