Onion Soup with Sherry (Recipe)

Ingredients

125g (4 oz) butter
454g (1 lb) onions, thinly sliced
30g (1 oz) whole wheat flour
125ml (4fl oz) dry sherry
1.5 l(48fl oz) chicken stock
90g (3 oz) grated Gruyere cheese, plus extra for garnish
1/2 tbsp salt
Freshly ground black pepper
Large pinch of dried thyme
Large pinch of dried mace

Steps

1.  Heat the butter in a large saucepan over medium heat.  Cook the onions for about 6 minutes or until tender.  Sprinkle in the flour and stir well.  Stir in the sherry and stock , and simmer for about 20 minutes.  Add the cheese, salt, pepper, thyme and mace.  Simmer for another 5 minutes.  Serve in warm bowls garnished with grated cheese.
