Texas Chilli (Recipe)

Ingredients

2 tbsp vegetable oil
454g (1 lb) beef sirloin, coarse grind
30g (1 oz) chopped onion
3 cloves garlic, chopped
1 tbsp chili powder
1/4 tsp crushed dried oregano
1/4 tsp paprika
1/4 tsp dried cumin seeds
1/4 tsp ground cumin
1/8 tsp cayenne pepper
60ml (2fl oz) tomato puree
60g (2 oz) tomato puree
60g (2 oz) diced tomatoes, with juice
125ml (4fl oz) beef stock
1 1/2 tbsp grated Cheddar cheese

Steps

1.  Heat the oil in a large saute pan over medium-high heat.  Add the beef and cook uncovered until browned.  Add the onion, garlic and all the dried seasonings; stir well to mix, and cook until the onions are tender.
2.  Transfer to a saucepan with a cover and add the tomato puree, diced tomatoes and stock.  Simmer covered for about 1 hour, adding  a little water or additional beef stock if the mixture appears too dry: it should be stick and soupy.  Serve in warm bowls garnished with grated Cheddar cheese.
