Soy Sauce Vinaigrette (Recipe)

Ingredients

1/2 tbsp sesame seeds
60ml (2fl oz) rice vinegar
2 tbsp mirin
2 tbsp tamari or soy sauce
1 tsp sesame oil (optional)

Steps

1.  Toast the sesame seeds dry in a small saute pan over low heat, shaking the pan occasionally to toast evenly until golden.  While the seeds are still warm, crush them using a mortar and pestle (or with the flat part of a chef's knife).
2.  Combine all the ingredients in a bowl and whisk to combine.  Will keep for 1-2 weeks in the refrigerator; whisk before use if separated
