Stilton and Cheddar Cheese Soup (Recipe)

Ingredients

2 tbsp butter
60g (2oz) finely chopped onion
60g (2oz) finely chopped peeled carrot
60g (2oz) cup finely chopped elery
1/2 tsp finely chopped garlic
750mlml (24fl) chicken stock
60g (2oz) crumbled Stilton cheese
60g (2oz) diced Cheddar cheese
1/8 tsp bicarbonate of soda
250ml (8fl oz) double cream
80ml (2 1/2 fl oz) dry white wine
Salt and freshly ground black pepper to taste
Dash of cayenne pepper
1 bay leaf
15g (1/2 oz) chopped fresh parsley for garnish

Steps

1.  Melt and butter in a large saucepan over medium-high heat.  Add the onion, carrot, celery, and garlic, saute for about 8 minutes or until soft.
2.  Add the stock, cheese, bicarbonate of soda, cream, wine, bay leaf, boil, reduce the heat to low, and simmer for about 10 minutes.  Remove the bay leaf.  In a food processor or blender, puree the soup until smooth.  Add the milk to the soup if is too thick.
3.  Serve in warm soup bowls and garnish with fresh parsley.
