Ingredients
900g ( lb) ripe tomatoes, chopped
3 green onions, chopped
1/2 red peppers, seeded and chopped
2 cloves garlic, crushed
500ml (16fl oz) chicken stock
1/2 tsp sugar
60ml (2fl oz) plain yogurt
1 tbsp chopped fresh basil
Salt and freshly ground black pepper to taste
Chopped chives for garnish
Steps
1. In a large saucepan, combine the tomatoes, green onions, red pepper, garlic, stock and sugar; bring to the boil, reduce to a simmer and cook for about 15 minutes. Remove from the heat and let cool.
2. In a blender or a food processor, puree the soup until smooth. Strain the soup through a fine-mesh sieve into a bowl. Cover and refrigerate until chilled. Stir in the yogurt, basil and salt and peppers. Serve in chilled bowls garnished with chopped chives.
