Ingredients
1 large head radicchio
Olive oil
Salt and freshly ground black pepper
Two 12mm(1/2 in) thick slices fontina cheese
Steps
1. Prepare a charcoal grill or preheat a grill to high. Make sure the grill grate is clean and lightly oiled to prevent sticking.
2. Trim the stem of the radicchio and cut the head in half lengthwise. Brush the halves with olive oil and season with salt and pepper.
3. Grill the radicchio cut-side down, until it starts to wilt and is slightly charred around the edges. Turn over the radicchio and top each half with a slice of cheese. (The cheese will melt as the other side cooks.) Serve immediately.
