Ingredients
3 strips lean bacon
900g (2 lb) spring greens (about 2 big bunches)
2 spring onions, sliced
Salt and freshly ground black pepper to taste
Squeeze of fresh lemon juice
Steps
1. Cut the bacon into 12mm (1/2 in) pieces. Cook the bacon over medium low heat in a medium-sized saucepan until the fat is clear and the bacon is crisp.
2. While the bacon is cooking, cut off and discard the stems from the cabbage greens. Roughly chop the greens and wash them thoroughly.
3. Add the greens to the pot with the bacon, along with spring onions and 205ml (8fl oz) of water. Cover and cook medium-low heat for about 2 hours, stirring occasionally. Add more water if it seems to be getting too dry. Season with salt and pepper and lemon juice.
