Ingredients
3 tbsp aged balsamic vinegar
2 tbsp extra-virgin olive oil
Salt and freshly ground black pepper to taste
1/2 tbsp chopped fresh parsley
1/2 tbsp chopped fresh basil
1 large ripe beefsteak tomato, cut into 12mm (1/2 in) slices
Steps
1. In a medium-size bowl, whisk together the vinegar, olive oil, salt and pepper, parsley and basil. Add the tomato slices and marinate for 1 hour before serving. Best served at room temperature.
