Sauteed Mushrooms with Taragon (Recipe)

Ingredients

1 tbsp olive oil
300g (10 oz) button mushrooms, trimmed, cleansed and cut into quarters
1/2 tsp chopped garlic
Salt and freshly ground black pepper to taste
1/2 tsp coarsely chopped taragon
Squeeze of fresh lemon

Steps

1.  Heat the olive oil in a medium-size saute pan over medium-high heat.  Add the mushrooms and cook for about 5 minutes, stirring often, until they are lightly brown.
2.  Lower the heat, add the garlic and cook for 1 minute.  Season with salt and pepper.  Add the tarragon and a squeeze of lemon juice.  Serve immediately.
