Red Onions Braised with Sherry Vinegar (Recipe)

Ingredients

2 tbsp chicken stock
680g (1 lb 8oz) red onions, peeled and sliced
1 tsp sugar
Salt and freshly ground black pepper to taste
3 tbsp (or to taste) sherry wine vinegar

Steps

1.  Heat the stock in a large saucepan over medium-high heat.  Add the onions, sugar and salt and pepper.  Cook over low heat covered for about 35 minutes or until the onions are lightly browned.
2.  Add the vinegar and cook for another 30 minutes covered over low heat.  The onions should be very soft and glazed.
