Spiced Carrots (Recipe)

Ingredients

454g (1 lb) carrots
250ml (8fl oz) vegetable stock
1 tbsp honey
1/2 tsp ground cinnamon
1/4 tsp ground cumin
1/8 tsp cayenne pepper
125ml (4fl oz) fresh orange juice
Grated zest of 1 orange
Salt and freshly ground black pepper to taste
Cayenne pepper to taste
1 1/2 tbsp chopped fresh mint

Steps

1.  Peel and slice the carrots about 6mm (1/4 in) thick.
2.  Bring the stock to the boil in a large saute pan over medium heat.  Add the carrots, honey and spices; stir well.  Reduce the heat and simmer until the carrots are just tender, about 6 minutes.  (They should remain a little crisp.)
3.  Stir in the orange juice and zest, and simmer for an additional 2 minutes.  Season with salt, pepper and cayenne.  Sprinkle with the chopped mint and serve.
