Garlic-Ginger Brussels Sprouts (Recipe)

Ingredients

454g (1 lb) Brussels sprouts, ends trimmed
375ml (12fl oz) chicken stock or water divided
1/2 tbsp finely chopped garlic
1/2 tbsp grated fresh root ginger
1 tsp grated zest
3/4 tsp fennel seeds
Salt and freshly ground black pepper to taste

Steps

1.  Cut the stems from the sprouts and remove any bruised leaves.  Cut the sprouts in half and then into very thin strips.
2.  Bring 250ml (8fl oz) of the stock (or water) to the boil in a large saute pan.  Reduce to a simmer, and the sprouts, garlic, ginger and lemon zest.  Cook uncovered over high heat, stirring often, for about 5 minutes or until the sprouts are tender.  Add the reserved stock if they are getting to dry.  Stir in the fennel seeds and salt and pepper.
