Hollandaise Sauce (Recipe)


Ingredients

60g (2 oz) butter
3 egg yolks
2 tbsp fresh-squeezed lemon juice
Dash of cayenne pepper
Salt and freshly ground black pepper to taste

Steps

1.  Melt the butter in a small saucepan over low heat.  In a blender, mix the egg yolks, lemon juice and cayenne.  With the motor running, add the melted butter in a slow stream.  Blend for about 30 seconds or until thick.  Keep over the bowl of very hot water, stirring occasionally until ready to serve.  Add salt and pepper to taste.
