Steak and Eggs (Recipe)


Ingredients

1 tbsp vegetable oil
454g (1 lb) sirloin steak (about 25mm/1 in thick)
Salt and cayenne pepper
2 tbsp butter
8 large eggs
1/2 tsp snipped chives

Steps

1.  Preheat the oven to 180°C, 350° F, gas mark 4.
2.  Preheat a large cast-iron frying pan over medium heat until hot, about 5 minutes.  Raise the heat to high and add the oil.  Season the steak with salt and cayenne pepper.  Place the steak in the pan and cook on each side for about 4 minutes or until golden brown.  Transfer the steak to the oven and cook for about 5 minutes for medium rare.
3.  Let the steak stand in a tin-foil tent for 10 minutes.
4.  Heat 2 non-stick saute pans over medium-low heat.  Melt 1 tablespoon of butter in each pan.  Break 4 eggs into each saute pan.  Season the eggs lightly with the chives, salt and cayenne pepper.  Cook until the whites are just set.  Divide the eggs among four warm plates.
5.  Cut the steak into slices and serve with the eggs.
