Barbecued Chicken Wings (Recipe)


Ingredients

4 pounds chicken wings (20 wings)
3/4 cup catsup
1/4 cup finely chopped onion
2 tablespoons water
4 cloves garlic, minced
1 tablespoon white vinegar
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon chili powder
1/2 teaspoon dry mustard
1/2 teaspoon dried oregano, crushed
2 bay leaves
Few dashes bottled hot pepper sauce

Steps

1. Preheat the oven 375c.


2. Rinse the chicken wings and pat them dry.  Cut off and discard wings tips.  Cut each wings at the join to make 2 sections.  Arrange the chicken pieces in a single layer in an ungreased baking pan.  Bake in the oven 375c oven for 25 minutes.  Drain the fat from baking pan.
3. Meanwhile, in a medium sauce pan, combine the catsup, onion, water, garlic, vinegar, brown sugar, Worcestershire sauce, chili powder, dry mustard, oregano, bay leaves and hot pepper sauce.  Bring to a boil; reduce the heat.  Simmer, uncovered, for 2 minutes, stirring occasionally.  Remove the bay leaves. 


4. Pour the barbecue sauce over the partially cooked chicken in the baking pan.  Bake for 10 minutes; then stir the chicken and bake for 10 minutes more.  Transfer the chicken pieces to a lettuce-lined platter.
