Mary's Cheese Ball (Recipe)

Ingredients

1 8-ounce package cream cheese, softened
4 ounces blue cheese, finely crumbled
1/2 cup finely chopped onion
2 tablespoons prepared mustard
1 to 2 tablespoons pickle relish
2 teaspoons Worcestershire sauce
1 teaspoon prepared horseradish
1/2 teaspoon salt
2 cups shredded Swiss cheese, (8 ounces)
1 cup shredded cheddar cheese, (4 ounces)
1 tablespoon chili powder or paprika (optional)
1/2 cup ground walnuts or pecans (optional)
1/3 cup snipped fresh parsley or dill (optional)

Steps

1. In a large bowl, combine the cream cheese with the blue cheese, onion, mustard, pickle relish, Worcestershire sauce, horseradish and salt.  Beat the mixture with an electric mixer until it is light and fluffy.  Fold in the Swiss and cheddar cheese.  Chill the cheese mixture for at least 2 hours.

2. Form the chilled cheese mixture into 1 large or 2 small balls.

3. Roll the cheese ball(s) in your choice of coatings: chili powder or paprika, walnuts or pecans, or parsley or dill.  Wrap and chill until serving time, for up to 3 days.
