80ml (1/2fl oz) mayonnaise
2 green onions, finely chopped
1/2 plum tomato, seeded and chopped
1 tbsp chopped fresh parsley and tarragon combined
2 tsp fresh lemon juice
1/2 tsp grated fresh lemon zest
Pinch of cayenne pepper
225g (8 oz) crabmeat, flaked
Salt and freshly ground black pepper to taste
2 large yellow, red or green peppers, cut into 50 x 25mm (2x1 in) strips
Fresh chervil sprigs for garnish
Steps
Mix together the mayonnaise, green onions, tomato, chopped parsley and tarragon, lemon juice, lemon zest and cayenne in a medium-sized bowl until blended. Add the crabmeat and toss lightly to coat. Season with salt and pepper. Spoon 1 or 2 teaspoons of crab mixture onto each pepper strip. Garnish with chervil sprigs.
