1 medium-size ripe pineapple
6 tbsp freshly squeezed lemon juice, plus thinly sliced lemons for garnish
Sugar substitute (optional)
Steps
1. Peel the pineapple and cut out the core. Cut the fruit into small pieces. Place in a food processor and process to fairly, pulpy consistency. Transfer to a large pitcher.
2. Add the lemon juice, 750ml (24fl oz) of cold water, and 1/4 tablespoon at a time of sugar substitute to the desired, stirring until dissolved. Chill for several hours and serve in glasses over ice with a thin slice of lemon for garnish.
