Ingredients
1 tablespoon vegetable oil
2 onions, sliced and separated into rings
3 1 1/4- to 1 1/2-pound turkey drumsticks, deboned and cut into pieces
2 apples, peeled, cored and chopped
1 tablespoon curry powder
1/4 teaspoon salt
1/4 teaspoon pepper
4 tomatoes, peeled and chopped
1/2 cup chicken broth
2 tablespoons lemon juice
2 to 3 cups hot cooked rice
Steps
1. In a 12-inch skillet, heat the oil over medium heat. Add the onion and cook until they are soft. Push the onions to the edge of the skillet.
2. Add the turkey pieces and cook and stir until the turkey is brown. Stir in the apples, curry powder, salt and pepper. Cook the mixture for 2 minutes.
3. Stir in the tomatoes, chicken broth and lemon juice until the ingredients are well mixed. Cover the skillet and simmer the mixture for 45 to 60 minutes or until the turkey is tender.
4. Uncover the skillet and boil the stew gently for 15 minutes to reduce the liquid slightly. Serve with the hot cooked rice.
Tips:
The liquid in the stew can be a bit thin. To thicken it quickly, transfer the turkey to a serving platter and keep it warm. In a small bowl, stir together 2 tablespoons cornstarch and 2 tablespoons water. Add the cornstarch mixture to the liquid in the skillet and stir over medium heat until the sauce is slightly thickened and bubbly. Cook and stir for 2 minutes more. Serve the sauce over the turkey.
To help eliminate some of the fat from this recipe, remove the skin from the turkey legs before you cut it into pieces.
If you'd rather use thighs to make this stew, substitute two 2-2 1/2- pound thighs for the 3 turkey drumsticks.
To bone a turkey drumstick, remove the skin so you can see the tendons. Remove the visible outer tendons using the tip of the knife to cut away.
Cut away portions of meat from the bone. To remove the long white inner tendons from the turkey pieces, pull on the end of a tendon with your fingers. At the same time, use a knife to scrape against the tendon, freeing the surrounding meat.
