Ingredients
4 3-ounce turkey breast slices, 1/4 inch thick
1/4 cup all-purpose flour
1/8 teaspoon salt
1/8 teaspoon pepper
1 egg
2 tablespoons water
1 cup fresh bread crumbs
1/2 cup freshly grated Parmesan cheese
1/4 cup butter or margarine
Snipped parsley
Steps
1. Rinse the turkey slices and pat them dry.
2. Stir together the flour, salt and pepper in a shallow dish.
3. In a second shallow dish, beat together the egg and water.
4. In a third shallow dish, combine the fresh bread crumbs and Parmesan cheese. Dip each turkey slice first in the flour mixture, next in the egg mixture and finally in the bread crumb mixture.
5. In a 12-inch skillet over medium high heat, melt the butter or margarine. Add the coated turkey slices to the skillet and cook for 2 to 3 minutes on each side or until no pink remains. Transfer the turkey to a serving platter. Garnish with the snipped parsley.
Tips:
To flatten turkey slices to 1/4-inch thickness. Wrap each turkey slice in heavy-duty plastic wrap and pound from the center outward with a meat mallet or other heavy utensil.
Fresh Parmesan cheese varies in flavor from mild to robust depending on how long the cheese has been aged. To grate your own Parmesan, use a food processor or hand grater. If you use shaker-ready grated Parmesan cheese, you'll want to use less than the amount called for in the recipe. Close the shaker after each use and store in a cool, dry place.
Use a skillet with a non-stick coating to prevent the cheese from sticking to the skillet.
