Egg Mustard Dressing (Recipe)


Ingredients

2 hard-cooked eggs
2 tablespoons cider vinegar
1 tablespoon Creole mustard
1 tablespoon mayonnaise or salad dressing
1/2 teaspoon garlic powder
1/2 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon  celery salt or onion salt
1/2 cup safflower oil
Slices of cooked crumbled bacon (optional)

Steps

1. Separate the hard-cooked egg whites and yolks. Finely chop the whites and refrigerate until needed to garnish the salad.
2. In a blender or food processor, combine the egg yolks, vinegar, mustard, mayonnaise, garlic powder, Worcestershire sauce, salt and celery salt or onion salt.  Blend until the egg yolks are well mixed.


3. Slowly add the safflower oil.  Process until thoroughly combined and the mixture has a smooth consistency.  Serve immediately or cover and store in the refrigerator up to 3 days.

Tips:

If you prefer spicy dressings, you can substitute any spicy mustard for the Creole mustard.

When you dress a salad with this dressing, add a few slices of cooked, crumbled bacon to the salad just before tossing.  Or, you might want to serve this dressing on the side.  Just before serving, place the dressing in a serving bowl and sprinkle the reserved finely chopped hard-cooked egg white and some crumbled bacon on the top.

Try serving Egg Mustard Dressing on cooked, chilled asparagus; assorted mixed greens or spinach salad.
