Ingredients
680g (1 lb 8 oz) small courgettes
10 eggs
30g (1 oz) freshly grated Parmesan cheese, divided
Salt and freshly ground black pepper to taste
2 tbsp unsalted butter
2 tbsp olive oil
Steps
1. Preheat the oven to 180°C, 350°F, gas mark 4.
2. Trim the courgette and cut them crossways into very thin slices. In a medium-size bowl, beat the eggs until light and frothy. Add the courgettes, half the cheese and the salt and pepper.
3. Melt the butter and add the oil to a medium-size non stick ovenproof saute pan over medium heat. Add the egg mixture. Sprinkle with the remaining cheese. Place it in the oven and bake until set but still slightly moist, about 20 minutes.
4. Serve the frittata directly from the pan or slide it into a plate. Cut into wedges and serve immediately.
