1 1/2 cup graham cracker crumbs
1 tbsp sugar
1/4 cup butter, melted
1 cup light sour cream
1/2 bar light cream cheese, softened
1/4 cup sugar
1/4 cup orange marmalade, divided
1 can (240g) Dole Crush Pineapple
2 envelopes unflavored gelatin crystals
1/2 cup Dole Pineapple Orange Juice Drink
Steps
1. Combine crumbs, 1 tbsp. sugar and melted butter in 8-inch square dish
2. Pat mixture firmly and evenly onto bottom of pan
3. Freeze for 10 minutes.
4. Beat together sour cream, cream cheese, 1/4 cup sugar and 1 tbsp. marmalade and then set aside
5. Stir together crushed pineapple and the remaining 3 tbsp. marmalade in a small bowl until blended
6. Sprinkle gelatin over 1/2 cup pineapple orange juice in a small saucepan and let it stand for 1 minute
7. Cook and stir over low heat until gelatin completely dissolves
8. Beat gelatin mixture into sour cream mixture until well blended
9. Spoon over evenly pineapple mixture over sour cream filling
10. Cover and refrigerate 2 hours or until firm
