Ingredients
80ml (2 1/2fl oz) balsamic vinegar
1/2 tbsp chopped shallots
1/2 tsp chopped fresh marjoram or 1/4 tsp dried
1 tbsp Dijon mustard
Salt and freshlyy ground pepper to taste
125ml (4fl oz), plus 2 tbsp good-quality extra-virgin olive oil
Steps
1. Combine all the ingredients except the olive oil in a mixing bowl; whisk to combine. While whisking, slowly add in the olive oil at a drizzle. Adjust the seasoning to taste. Whisk before use if separated. This vinaigrette will keep 5 days covered tightly and refrigerated.
