Orange Vinaigrette (Recipe)


Ingredients

60ml (2fl oz) champagne vinegar
3 tbsp fresh-squeezed orange juice
2 tsp orange rind
Salt and freshly ground black pepper to taste
125ml (4fl oz) olive oil

Steps

1.  Whisk together the vinegar, orange juice, zest and a good pinch of salt and pepper in a mixing bowl.  While whisking, slowly add in the olive oil at a drizzle.  Adjust seasoning to taste.  The vinaigrette will keep for 1-2 weeks in the refrigerator.  Whisk before use if separated.
