Blue Cheese Dressing (Recipe)


Ingredients

125ml (4fl oz) sour cream
125ml (4fl oz) mayonnaise
2 spring onions, chopped
2-3 tbsp fresh-squeezed lemon juice
60g (2oz) blue cheese, crumbled
Freshly ground black pepper

Steps

1.  Combine the sour cream, mayonnaise, spring onions and lemon juice in a bowl; mix well.  Stir in the cheese and pepper.  (The dressing should be salty enough from the cheese, but add a pinch if desired.)  Cover and refrigerate for at least 4 hours before serving.  The dressing will keep up to 5 days, covered tightly and refrigerated.
