Scrambled Tofu (Recipe)














Ingredients

3 cups tofu, cubed
3 eggs, beaten
1 onion, chopped
1 clove garlic, minced
2 tablespoons margarine
Salt to taste
Dash of turmeric

Steps

1. Freeze tofu until icy (Freezing will create texture in the tofu). Thaw then squeeze water.
2. Mash tofu.
3. Season beaten eggs with salt.
4. Saute garlic and onion in margarine.
5. Add mashed tofu, then stir over low fire.
6. Add eggs stirring continuously.
7. Season with salt.
8. Dash with turmeric until mixture becomes yellowish, stirring continuously.
9. Add bell peppers.
10 Serve hot.
