Spinach And Ricotta Dip (Recipe)


Ingredients

300g (10z) frozen chopped spinach, thawed and drained
60g (2oz) ricotta cheese
80ml (1/2fl oz) mayonnaise
60g (2oz) chopped green onions
80ml (2fl oz) sour cream
3 tbsp lemon juice
1 tbsp grated onion (including juice)
Dash of Worcester sauce
Salt and freshly ground black pepper to taste
Chopped parsley for garnish

Steps

Combine all the ingredients, except the parsley, in a food processor and blend until smooth.  Adjust seasoning to taste.  Transfer to a bowl and chill thoroughly.  Top with chopped parsley.  Serve with fresh trimmed vegetables or toasted bread rounds.
